Chocolate Orange Crispy Cakes


I love baking, however, I tend to get bored if it takes hours and hours to complete. Rice crispy cakes could possibly be the fastest and easiest recipe in the world. So, I thought I'd try them this week with a little festive twist...

I don't know whether it's just my partner and I's family, but getting a Terry's Chocolate Orange in your stocking is something of an unspoken rule. It's one of those things that you only see around Christmas time and when you smell them it transports you back to memories of Christmas past. So I thought we'd try and emulate that in these easy, no-bake rice crispy cakes!


All you need is:

100g Rice Crispies or Cornflakes or Cheerios
150g Plain Chocolate + 75g Chocolate Orange (for the choc-o-fying the rice crispies)
100g Plain Chocolate + 40g Chocolate Orange (for the chocolate base!)
Orange Flavouring (Optional)
Edible Glitter
Festive Cake Toppers

1. First, measure out all of your ingredients and separate into different bowls. You'll need four lots of chocolate split into two bowls, one for the rice crispies and one for the chocolate base!


2. Fill a pan 1/2 full of water and leave to boil. When bubbling, place a ceramic/glass plate over the top and melt your larger batch of chocolate. You should stir often to ensure the chocolate doesn't burn. 

3. Once smooth, remove the bowl and put to one side. Allow the bowl to cool enough to touch but not so the chocolate hardens. Have a little taste, if it's not orange enough add in a teaspoon of Orange extract, I added a couple teaspoons.


4. Add the rice crispies to the melted chocolate and stir. Whilst you are doing this, melt the second batch of chocolate in the same way as before. 

5. Prepare a baking tray or chopping board by lining it with greaseproof paper. 


6. With the second batch of melted chocolate, spoon a circle of chocolate onto the tray. You should aim to get your chocolate about 2 inches wide all around. It doesn't have to be too neat so don't worry if you make a mess!

7. Then spoon the chocolate rice crispy mixture into a ball and lay on top of the chocolate. Press down lightly so they combine. This will give your cakes a solid chocolate base!


8. Sprinkle on the edible glitter and finish off with your festive cake toppers. Leave to harden in the fridge for 15 - 20 minutes and enjoy!

I love this recipe, like I said it's super quick and only takes about 15minutes. The solid chocolate base isn't necessary, but it's just a little bit of a quirky way of mixing up a very simple recipe. It's a great recipe to do with kids and cousins alike and working together over the festive season. I hope you love it and if you try it at hope don't forget to tag me or tweet me any pictures.
